Vitamine returns for a new edition of GOOD FOOD, alongside Hugo Vallat from Jam and François Masson from détail.

 

détail. is an avant-garde studio based in Brussels, Paris, and Copenhagen, which reinvents the culinary experience by enhancing what is too often overlooked: the details. Here, it's not just about creating meals, but about shaping unique moments where gastronomy, design, social connections, and international influences meet.

Its approach is based on collaboration and the cross-pollination of perspectives, to give birth to truly singular experiences. Drinks, food, and scenography are essential components: every pairing, every staging is designed to magnify the moment.

 


Hugo founded Jam to create a space for expression. A way to share his vision beyond the plate. 

He grew up in a family where everything revolved around the dinner table. Early on, he understood that cooking wasn't just about recipes, but primarily a way to bring people together, to share, and to create memorable moments.

Over the years, he developed a free, sincere, and deeply personal cuisine. Inspired by his experiences, nourished by his travels and encounters, it also draws its roots from the Provence region where he grew up.

His cooking is guided by instinct, far from rigid frameworks and calculations. He favors flame cooking, raw and refined plates, where each product fully expresses itself. Guided by the season, taste, and the desire of the moment, he composes vibrant dishes, both simple and soulful, a cuisine of emotion above all.
