
Bertrand BRESOLIN, originally from Pujaut, is currently the executive chef at Bibendum.
After 3 years of travel, he returned to France to complete a bachelor's degree at the Avignon hotel school.
Trained alongside chefs like Jérome Ryon (Carcassonne) and Édouard Loubet (Bonnieux), he has now been working for 7 years alongside Michelin-starred chef Mathieu Desmarest.
His cuisine is local, seasonal, simple, and sincere.


Baptiste Ross-Bonneau began his career in sommelierie in 2011.
Trained by Georges Gracia, he became head sommelier at La Barbacane (Hôtel de la Cité, Carcassonne) in 2013.
Passionate about the Languedoc-Roussillon terroir, he highlights local winemakers and their treasures.
Winner of the Challenge Sud de France in 2018, he created "Sommelier de la Cité" in 2019 to share his passion through workshops, evenings, and tastings.
